about 10 cups popcorn (3/8 cup kernels)
1 cup salted butter
1 cup brown sugar
2 tsp vanilla extract
1/2 teaspoon baking soda
Make your popcorn and set aside.
In a large saucepan, on low heat, melt the butter then add the brown sugar. Stir until mixed. As soon as the mixture begins to bubble, set a timer for 3 minutes and don’t touch it.
Add vanilla, let cook for a few more seconds. Turn off the heat, immediately add the baking soda, and stir vigorously. Drizzle over popcorn and stir until completely coated.
Spread out on a parchment or silicone lined baking sheet and allow to cool.
